A delicious treat you can feel good about! Introducing our Pecan Pie Magic Cookie Bars, this recipe will leave you breathless!

Ingredients for Cookie Layer:

Ingredients for Pecan Pie Layer:

  • 8-9 Pitted Medjool Dates, soaked for 20 minutes
  • 1 Cup Chopped Pecans, soaked overnight
  • 1 Tbsp Melted Coconut Oil
  • 1 Tsp Vanilla Extract
  • 1/2 Tsp Ground Nutmeg
  • 1/2 Tsp Ground Cinnamon

Topping Ingredients:

  • 1/4 Cup Chopped Pecans
  • 1/4 Cup Shredded Coconut
  • 3 Tbsp Chocolate Chips

Directions to Bake Pecan Pie Magic Cookie Bars:

  • Preheat oven to 350F degrees.
  • Drain then pat dry soaked pecans.
  • Lay flat on a baking sheet and toast in oven for 2-3 minutes.
  • In a large bowl, add cookie layer ingredients and mix into dough. Spread evenly into a pie pan or 8x8 square baking dish.
  • In a blender or food processor, add pecan pie layer ingredients and blend until sticky caramel-like consistency forms.
  • Using a spatula, spread pecan pie layer over cookie layer, evenly.
  • Sprinkle toppings over top.
  • Bake for 15-17 minutes.
  • ENJOY.
