Ingredients for Cookie Layer:
- 1 Chocolate Chip Cookie Mix
- 3 Tbsp Melted Coconut Oil
- 2 Tbsp Water
Ingredients for Pecan Pie Layer:
- 8-9 Pitted Medjool Dates, soaked for 20 minutes
- 1 Cup Chopped Pecans, soaked overnight
- 1 Tbsp Melted Coconut Oil
- 1 Tsp Vanilla Extract
- 1/2 Tsp Ground Nutmeg
- 1/2 Tsp Ground Cinnamon
Topping Ingredients:
- 1/4 Cup Chopped Pecans
- 1/4 Cup Shredded Coconut
- 3 Tbsp Chocolate Chips
Directions to Bake Pecan Pie Magic Cookie Bars:
- Preheat oven to 350F degrees.
- Drain then pat dry soaked pecans.
- Lay flat on a baking sheet and toast in oven for 2-3 minutes.
- In a large bowl, add cookie layer ingredients and mix into dough. Spread evenly into a pie pan or 8x8 square baking dish.
- In a blender or food processor, add pecan pie layer ingredients and blend until sticky caramel-like consistency forms.
- Using a spatula, spread pecan pie layer over cookie layer, evenly.
- Sprinkle toppings over top.
- Bake for 15-17 minutes.
