This is hands down one of our favorite banana bread recipes! It's gluten free, refined sugar free, and dairy free. The texture is out of this world thanks to the Olive Oil, AND it's protein packed. Drizzle You Again Chocolate Honey over a slice and your taste buds will be in heaven.
Yields: 12 Slices
Prep Time: 10 minutes
Bake Time: 40-45 minutes
Ingredients:
3 Medium Ripe Bananas
2 Pasture Raised Eggs
2 Tbsp nut butter (peanut, cashew, etc.)
1/3 Cup Olive Oil
1 Tbsp Maple Syrup
1/2 Cup Coconut Sugar
1 1/2 Cup Gluten Free Oats, blended into flour (keep some grittiness for texture)
2 Scoops Collagen or Protein Powder (vegan option)
2 Tsp Baking Soda
1 Tsp Sea Salt
Directions:
In a large bowl, mash banana then add eggs and whisk. Add nut butter, olive oil and maple syrup and stir until creamy.
Add dry ingredients to wet ingredients and stir until batter forms.
Pour into an oiled (like coconut oil or avocado oil) bread pan.
Bake at 350F degrees for 40-45 minutes. Check at 40 minutes.
The edges will brown, and the center should be cooked through.
